Cake Batter Chex Mix- easter treat

Are you a fan of Chex mix!  I am when it is covered and smothered in lots of sugary goodness.  I pinned a recipe for cake battered Chex mix some time back and forgot about it.  While I was looking through my pin boards a few months back I came across it again.  So when I made the Cake Batter Rice Krispy Treats last month for Valentine's Day I thought making the Chex mix would be a good way to use a little more of the leftover cake mix.  And yes, I made an Easter treat in February, lol.  The life of a blogger always making the next holiday treat a little early.


Here is what I used

1 C yellow cake mix

1 1/2 C chocolate chips

1 tsp. vanilla extract 

5 C Chex mix

1/2 C powder sugar

2 TBS.  butter

Easter sprinkles( as many as you want)

What I did

I took the cake mix, powder sugar, and some sprinkles and mixed them in a large ziplock bag.  Then I melted the butter and chocolate chips in the microwave in a pyrex measuring cup.  It took about 2 minutes to melt. Start with 1 minutes and add a minute as needed.  I poured the check mix in a bowl and poured the chocolate over it.  I mixed it up and then poured down into the bag.  Last I shook it up.  Then I poured a little out and tried it.  You should wait a few minutes or so to eat it so the chocolate can fully harden.  I couldn't wait.  It was so good.  I could have eaten that whole bag all by myself.  Thanks goodness I stopped myself.

This is a fun treat to make with or without the kids. My kids would have been a big help making this but this day they were too busy playing ball with daddy to want to help mommy. Even if they do not get in the kitchen with you they can enjoy the yummy treat with you once it is ready.  This would be great for treat bags for school or family at Easter. No matter what the holiday this cake batter Chex mix gets an A+ from me.
